Description
A hard, aged cow’s-milk cheese from the Parmigiano-Reggiano consortium. Grate over pasta, shave into a salad, or eat in shards with a drizzle of aged balsamic. 24 months gives it a drier crumb and pronounced umami.
Producer
Sourced from a single Reggio Emilia dairy, made only with milk, salt and rennet under DOP rules. Each wheel is stamped and inspected before it leaves Italy.
Storage & use
Keep wrapped in parchment, then loosely in the fridge — never plastic against the cut face. Best within three weeks of cutting. Bring to room temperature 30 minutes before serving.
